Aloo Methi/ Potato fenugreek leaves curry

Ingredients:

  • 1 1/2 cups  potato cubes
  • 2 cups chopped fenugreek leaves (methi)
  • salt to taste
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1/4 tsp asafoetida (hing)
  • 1 tsp ginger garlic paste
  • water
  • 1 medium tomato diced
  • 2 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander-cumin seeds powder

Preparation:

In a pressure cooker heat oil. Add mustard seeds and let them crackle. Add hing and ginger garlic paste and saute it till the cooked. Add tomato and fenugreek leaves and give it a good mix. Add all the spices and let it cook for 1 min. Add the cubed potatoes. Mix everything well. Add 2 cups of water. Close the pressure cooker and cook it for 3 whistles. Ready to serve Aloo Methi. Enjoy it with Roti or Rice.
